My BFF Ina: Bacon + Blueberries
I was even more obsessed with my girl Ina this past week than usual.
I don’t know if it’s because new episodes of Barefoot Contessa (in Napa! with Jeffrey!) are airing on Saturday’s on the Food Network,
or I don’t know if it’s because I just picked up her latest cookbook Foolproof,
but my guess is it’s just that I’m obsessed with her.
I made two of her recipes and both were incredible
(duh)
and so easy
(of course. It’s Ina!)
that I had to share.
Blueberry Coffee Cake Muffins

These stayed fresh really well in air tight containers.
and were so good for snacks, dessert, and breakfast.
For the Golden Globes, I figured I needed to make something in order to bribe my man-friend into letting me control the remote for 5 hours.
Bacon is always the answer.
This bacon was like pure crack (and everyone who has read this blog long enough knows crack is my form of highest food praise). These disappeared fast. I’ve been told I’m “not allowed to make it again”, which is when I know something is good.
Carmelized Bacon
I’ve already marked about 15 recipes with Post-its…..
recipe via Foolproof:
½ cup dark brown sugar, lightly packed
½ cup chopped pecans
2 tsp. kosher salt
1 tsp. freshly ground black pepper
1/8 tsp. cayenne pepper
2 Tbs. pure maple syrup
½ lb. thick-sliced smoked bacon
Preheat oven to 375 degrees F. Line a sheet pan with foil and place a wire baking rack over the top.
Combine the brown sugar and pecans in a food processor bowl and process until pecans are finely ground. Add the salt, black pepper and cayenne pepper and pulse just until combined. Add the maple syrup and pulse again to moisten the crumbs.
Cut bacon strips in half crosswise and line up across the baking rack, making sure pieces don’t touch each other. Using a small spoon or your fingers, evenly spread the prepared pecan mixture over the top of each piece of bacon, using all the mixture . Bake, uncovered, for 25-30 minutes, on center rack of oven, until the topping is very browned, but not burnt. (If bacon is underbaked, it won’t be crispy as it cools.)
While bacon is still hot, transfer to a paper towel-lined plate and set aside to cool. Serve at room temperature.

Friday I went to The Bedford with friends
Saturday we had sushi date night
then came home to a prosecco surprise
and a homemade pizza co. giant cookie
to finish the evening on the couch.

and sunday of course I watched E! all day for red carpet coverage.

I’m starting Grace: A Memoir on Audiobook today.
I had no idea what this was about other than seeing it in every instagram photo for the last 2 weeks, so now that I know I am excited to see what all the fuss is about.

AND AWARDS SEASON IS STARTING!
I want to just skip straight from Christmas + New Years to Spring. It is torture for me to bundle up, and then see all the warm weather clothes splattered across magazines and websites. The bright colors for spring are getting me very excited!
Whenever I get sucked into mindless online clicking, I end up at Asos. And I swear that website is never ending. I bought one of their “skater” style dresses last winter, and it is one of the most flattering and comfortable dresses I own. They make it in tons of different fabrics, cuts, and styles for any occasion. I especially love the embellished one below!

confession: I will continue to make fun of Taylor Swift and her non-stop IM IN LOVE, IM IN LOVE esapades…. but I’m actually really liking the Trouble song. That’s probably because I haven’t heard it 9,000 times yet, so by next Thursday maybe I’ll be back to myself and hate it.
But don’t worry, I’m not going soft on you, I’m already going insane from hearing about her and Harry breaking up.
So torturous. Obviously 2 months is a super serious, long term relationship, especially when you are 21 but still acting 16 so you can have a tween fan base.
