I have the easiest and most delicious dessert to share with you today!
And it is PERFECT for summertime and crazy heat.
No cooking required, you can make it ahead, and it’s served straight out of the fridge!
ICEBOX CAKE.
I made this at the lake in Michigan and then again this past weekend for a BBQ.
It takes less than twenty minutes to come together and is so insanely good.
The secret key ingredient is Tate’s Cookies! Which, as I’m sure you know, are the absolute best.
(The even better part is that they sell gluten free Tate’s and they taste exactly the same – truly. It makes zero sense, but it’s a miracle and they taste just as delicious! So if you have gluten free friends in your life this is such a perfect dessert. Otherwise of course feel free to use the regular Tate’s!)
One of my favorite things about this recipe is that it is easy to switch up whenever you like. I don’t think you can find a more perfect cookie for it than Tate’s, but you can always change up the Tate’s flavor! They have one with bits of Toffee in it and oh-my-yum it would be so, so good with those cookies and a different whipped cream. Feel free to leave the Kahlua or espresso out of the whipped cream, change up what kind of whipped cream recipe you like, you name it!
(Clearly I like booze in my cakes because Crack Cake and this IceBox Cake are my two favorites and WHOOPS they both have booze……sorry not sorry…. )
BUT. You can adjust anything to your perosnal preference!
I will say that it is JUST PERFECT the way it is though – with the mascarpone, espresso, cocoa powder, and kahlua. I don’t even like coffee and I love love this whipped cream!

- 2 cups cold heavy cream
- 12 ounces Italian mascarpone cheese
- ½ cup sugar
- ¼ cup coffee liqueur, such as Kahlua
- 2 tablespoons unsweetened cocoa powder, such as Pernigotti
- 1 teaspoon instant espresso powder
- 1 teaspoon pure vanilla extract
- 3 (8-ounce) packages chocolate chip cookies, such as Tate's Bake Shop
- Shaved semisweet chocolate, for garnish
- In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, coffee liqueur, cocoa powder, espresso powder, and vanilla. Mix on low speed to combine and then slowly raise the speed, until it forms firm peaks.
- To assemble the cake, arrange chocolate chip cookies flat in an 8-inch springform pan, covering the bottom as much as possible. (I break some cookies to fill in the spaces.) Spread a fifth of the mocha whipped cream evenly over the cookies. Place another layer of cookies on top, lying flat and touching, followed by another fifth of the cream. Continue layering cookies and cream until there are 5 layers of each, ending with a layer of cream. Smooth the top, cover with plastic wrap, and refrigerate overnight.
- Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut in wedges, and serve cold.
